The Taiwanese Cold Noodles
Since it's already summer, the temperature in Taiwan is really high. People could lose their appetite. Therefore, our favorite summertime dish is cold noodles.

What is Taiwanese cold noodles?
It's a noodle dish served without soup. The noodles are cooked and chilled, then topped with shredded cucumber, served with dressing.
The Dressing
Although there are different kinds of dressing, the ubiquitous one is the traditional one.
It's a mixture of sesame paste, soy sauce, vinegar, and minced garlic. If you are not a fan of raw garlic, you can ask for a vegetarian one, they would leave out the pungent spice.
Aside from the traditional one, others may incorporate Japanese or Thai elements.
